Sophora japonica and leek pork dumplings

Bought fresh locust flowers.

Rinse clean.

Control water.

Blanch until it turns green.

Boil appropriate amount of water in the pot.

Immediately scoop into a basin of cold water.

Water control for later use.

Cut the leeks into small pieces.

Cut carrots into small pieces.

Mince the ginger and set aside.

Use a meat grinder to grind the pork belly into minced meat, season with appropriate amount of salt, light soy sauce, dark soy sauce, oyster sauce, Sichuan pepper powder, and sesame oil.

Stir until vigorous.

Put sophora flowers, leeks, carrots, and minced ginger on top of the stuffing.

Mix well.

Heat an appropriate amount of oil in the pot, fry the peppercorns and green onions until fragrant.

Remove the peppercorns and scallions and let cool.

Pour into the filling.
