Strange flavor shrimp in white sauce
Overview
I have made this dish many times, and the key is the preparation of the crispy batter. I fried it a few times at first but it didn't get as crispy as a restaurant. Later I adjusted the ratio of various flours and the effect was very good.

Clean the shrimps, pick out the shrimp threads, remove the shrimp heads and peel off the skins.

Put the shrimp into an empty bowl, add cooking wine, salt, pepper, green onion, and ginger and marinate for 20 minutes.

Mix flour, starch, eggs, salt, oil, and water to form a slowly flowing batter.

Before frying, add baking powder and mix well, add marinated shrimps, and coat evenly with batter.

Heat the oil in a wok until it is 30% hot and add the shrimps coated in batter. Leave to set before flipping.

Remove and heat the oil until it is 70% hot, then deep-fry until golden brown, remove and control the oil.

Clean and shred the lettuce and set aside.

Spread lettuce on the bottom of the plate, place the fried shrimps on top, and top with salad dressing.
