Fried eel with shrimp
Overview
I went to the market and saw someone cutting the back of fresh eels, so I bought some. I happened to have some green shrimps at home, so I thought of a famous dish in Hangzhou called fried eels with shrimps!

Buy back the marked eel back

Wash off the outer mucus with hot water and cut into small pieces

Add some cooking wine and salt and marinate for a while

The shrimps are also marinated with cooking wine, salt and black pepper for a while

I made the sauce according to the ratio of light soy sauce: balsamic vinegar: sugar 1:1:1. Add light soy sauce to the bowl first

Add a small amount of cornstarch and mix well

Add oil in a small pot and heat until 60% hot, add eel backs one by one

Fry until golden brown and take out
