-
Wash the chicken and chop into pieces;

Peel the water chestnuts, wash and slice them into slices, slice the ginger, and dice the green onions;

Add appropriate amount of salt, sugar, cooking wine and a small amount of oil to the chicken pieces, mix well and marinate for 10 minutes;
-
Heat the pan, add an appropriate amount of oil, add the ginger slices and sauté until fragrant, add the chicken pieces and stir-fry for 3 minutes;
-
Add an appropriate amount of soy sauce and stir-fry evenly, then pour in half a bowl of water; (The light soy sauce I usually use has been mixed with a small amount of dark soy sauce.)
-
When it boils, add the water chestnuts and mix well, cover the pot and simmer for 8-10 minutes;
-
Add 2 tablespoons of starch to a small amount of water, mix well and set aside. After boiling the pot, add green onions, then pour in the mixed starch to thicken the juice;
