Chop two pig's trotters into evenly sized pieces, clean them, put them into a pot with cold water, add onions, ginger, and cooking wine and bring to a boil. After boiling, skim off the foam and cook for about five minutes

Take it out and rinse it repeatedly with clean water to remove any impurities. Then clean up the remaining pig hair. After processing, drain the water and set aside

Peel and clean the skin of onions and ginger, cut into onion segments, ginger slices, star anise, peppercorns, cinnamon, bay leaves, and jujubes. Rinse with clean water and prepare

Add oil to a hot pan and add a small spoonful of sugar. Boil the sugar over low heat and stir-fry until it turns dark red. When frying the sugar, be sure to stir-fry slowly over low heat and stir constantly

After frying the sugar color, add the cleaned pig's trotters, stir-fry evenly so that the pig's trotters are evenly coated with the sugar color and stir-fry to dry out the water. Add the green onions, ginger slices, star anise, pepper, cinnamon, and bay leaves, stir-fry evenly and stir-fry until the aroma is released

After the auxiliary ingredients are fragrant, add cooking wine, light soy sauce, a little dark soy sauce, and balsamic vinegar to the pot and stir-fry evenly

Pour in an appropriate amount of water to basically cover the pig's trotters

Add the jujubes, cover the pot and simmer for 1 hour. During the simmering process, you can skim off the oil to make the cooked pig's trotters less greasy

After 1 hour, add appropriate amount of salt to taste, cover the pot and continue to simmer for about 30 minutes

Stew until the pig's trotters are soft and tender, then use high heat to drain the soup

Turn off the heat, add a little chicken essence, stir evenly, take out the pot, put it into a plate, sprinkle with a little cooked white sesame seeds, and garnish with coriander leaves
