Overview

Because I grew up in a rural area, our rural Hui people are very particular (especially the elderly). My mother-in-law never goes out to eat hot pot or other meals because she says the hot pot ingredients are not clean! So we all go out to eat by ourselves! But we can’t eat it every time 😊 So today I made this pure halal boiled fish for my mother-in-law to eat 😊 (because the broth and butter are all prepared by myself and kept in the freezer)! This way I can cook and eat for my mom when I have the chance😄 (my mom is more particular)

Steps

  1. Wash the grass carp 🐠 and remove the head and fishy lines (as shown in the picture)

  2. Take the meat from both sides of the fish, (as shown in the picture)

  3. Cut with double flying knives (the first knife is continuous and the second knife is short) (as shown in the picture)

  4. Add sliced fish to sliced ginger, green onions, garlic slices, cooking wine, salt, and marinate for ten minutes

  5. Chop the fish bones into small pieces and marinate with the same ingredients as the fish for ten minutes (use the marinating time to stir-fry the ingredients)

  6. Ginger slices, garlic slices, dried chili segments, Sichuan peppercorns, bay leaves, star anise, cumin, butter, ready! (The ingredients are all prepared before cutting the fish)

  7. There are also rice peppers (I always forget to take pictures). Chop the rice peppers and fry them with aniseed

  8. Heat the oil in the bottom of the pot, add the ingredients prepared in the plate, stir-fry until fragrant, add the chili noodles and stir-fry for a while, pour in three bowls of boiling water and two bowls of broth and bring to a boil

  9. Add the fish head, add salt, light soy sauce, pepper noodles and red chili oil and cook for ten minutes

  10. Boil water in another pot. After the water boils, add more salt, chicken essence, and MSG. Add the chopped vegetables (the pickled fish🐠 have been washed and cut before😁), scald until cooked, drain out the water, and put it in a basin

  11. Pick out the onion, ginger and garlic slices inside the fish meat🐠fish bones🐠, add the eggs and starch, mix well and set aside

  12. Replace the water used for scalding vegetables and refill the water. After the water boils, put in the fish bones and cook them out. After taking out the fish bones, the water will continue to cook the fish meat (the fish meat will be ready after it has been in the pot for about two minutes)

  13. At this time, remove all the ingredients in the soup and add chicken essence, MSG, and sugar to taste!

  14. Add cooked fish bones and cook until fragrant

  15. Take out the cooked fish bones and put them on the vegetable basin! Don't move it (as shown in the picture)

  16. Finally, add the cooked fish fillets and cook for three minutes. Pour the soup and fish into the vegetable basin

  17. Place half a bowl of chili segments, peppercorns, minced garlic, spicy noodles, and cooked sesame seeds on top. Pour oil into the bottom of the pot and heat until smoking. When it smokes, pour in the spicy noodles to taste! (You are particularly hot at this time, please pay attention to your health)
