Beef wontons in sour soup
Overview
I went to Xi'an for a few days a few days ago and ate sour soup dumplings at Huifang. When a large bowl of dumplings was served, I was amazed by its appearance and tasted the dumplings. They tasted very fresh (¯﹃¯). After I came back, I copied it, replaced the dumplings with wontons, and made this sour soup beef wontons~

Add 1g of salt and cooking wine to the beef filling, stir evenly and marinate for about 20 minutes.

Prepare peeled leeks, carrots, ginger, and green onions.

Cut them all into pieces.

Add 2g salt, 2ml soy sauce, five-spice powder, and oyster sauce to the filling.

Mix well and the filling is ready.

Take a wonton wrapper and add fillings.

Wrap the wontons how you like.

Make water in a pot.

After the water boils, add wontons and cook over high heat.

When cooking wontons, put chopped chives, chopped coriander, vinegar, sesame oil, vinegar, 2g salt, 2ml soy sauce, and spicy oil into a bowl.

Ladle the cooked wontons and soup into bowls.

Mix well.

You can freeze the uneaten wontons and cook a few when you want to eat them, which is very convenient.
