Prepare minced bean sprouts and minced meat in advance (for specific instructions, please refer to another recipe by Jingfeng). Also prepare spicy millet and chopped erjingtiao (you can also prepare chopped green onion and coriander according to personal preference)

Sichuan alkaline water surface (yes, yes, it is the magical alkaline water surface in a certain drama~)

Use a knife to lightly press the pastry peanuts. Do not press them into pieces. Keep a few particles for a more delicious taste

Take a small bowl, add spicy millet, chopped Erjingtiao, sesame seeds, chili powder, and Sichuan pepper powder and set aside (the amount of chili can be adjusted according to personal preference)

Pour the hot rapeseed oil into the prepared small bowl to make fresh red oil chili oil (you can also use ready-made chili oil, but I personally prefer freshly made chili oil, which is more fragrant!)

Cook the alkaline noodles in the pot (don’t cook it too soft), drain the water and mix well with the prepared chili oil

Place on a plate, top with minced bean sprouts, minced pork, chopped peanuts, and sprinkle with some spicy millet and sesame seeds (you can sprinkle with some chopped green onion, coriander, etc. according to your personal preference)

Just mix well when eating~ (Be careful not to cry because it's so spicy~)
