We washed the chopped pig trotters we bought and put them in the cooking wine

Add scallions and ginger into cold water and blanch until foamy

This is the seasoning bag I bought from the place that sells seasonings in the market

Because I usually don’t have much to stew, I didn’t buy the loose ones. When I bought this kind, we used one-third of this bag for stewing pig trotters.

After the pot boils, we beat off the foam.

Take out the pig's trotters and rinse them again with hot water

Put in the rock sugar and we are going to fry the sugar color

Simmer over low heat until the rock sugar bubbles

We add the pig's trotters and stir-fry the sugar color, add one-third of the seasonings in the bag and stir-fry the chopped green onions and ginger

Pour in dark soy sauce and color

Pour in hot water to cover the pig's trotters and add an appropriate amount of salt.

Turn down the heat and simmer for about an hour and a half. If you like to eat soft and rotten food, you can use a pressure cooker for about 25 minutes. If you like to eat chewy food, use an iron pot to simmer it slowly.
