Shiitake Mushroom Sauce
Overview
Mushroom sauce is quite expensive in supermarkets, a small bottle costs more than ten yuan, and it disappears after just a few steamed buns. My family loves it, so my mother just happened to buy a big bag of shiitake mushrooms to make a mushroom sauce. Facts have proven that you can make mushroom sauce at home that is as good as the commercially available mushroom sauce. How fragrant is it? I made the sauce after the meal, but my brother ate less than half of it. Let’s try it too!

Wash the mushrooms and drain them.

Cut into pieces, not too small. You can see that the shiitake mushrooms are fresh, loose and not sticking to each other. If your shiitake mushrooms are too steamy, they need to be dried.

Roast black sesame seeds over low heat until fragrant. Set aside.

Mix shiitake mushrooms with flour.

You can control the amount of flour you use, add a small amount several times, and coat each mushroom lightly.

Fry the mushrooms ~ After the oil is hot, add it to medium heat.

Once fried to this state, you can take it out.

Leave the base oil in the pot, don't make it too little. Stir-fry the shallot segments, ginger slices, a handful of Sichuan peppercorns, and dried chili peppers over low heat.

Take a small bowl and make the sauce. One spoonful of bean paste, one spoonful of soybean paste, and one spoonful of sweet noodle sauce.

Pour the sauce into the fried base oil and stir-fry until fragrant.

Add diced shiitake mushrooms and stir-fry. Add light soy sauce.

During the stir-frying process, the shiitake mushrooms will release oil. After the oil comes out slightly, add an appropriate amount of water and simmer slowly over low heat. Add thirteen spices, black pepper powder, and dry chili powder according to personal preference. Stir fry until the water vapor evaporates.

After the water vapor evaporates, add the processed peanuts and black sesame seeds and stir-fry evenly. Turn off the heat~

You don’t want to eat steamed buns with rice under the noodles. They are so fragrant. I don’t like too much oil, so I didn’t make the commercially available kind soaked in a puddle of oil. If you like that, just leave more base oil when frying the ingredients~
