Overview
Cantonese-style tiger skin chicken feet with black bean sauce is a must-order for every morning tea. Our children especially like it. Ingredients

- Chicken feet 500g
- Clear water 500ml
- Doubanjiang 1 tablespoon
- Five spice powder 5 grams
- Light soy sauce 1 tablespoon
- Maltose 1 tablespoon (blanched)
- Old soy sauce 1 tablespoon
- Onions 10 grams
- Oyster sauce 1 tablespoon
- Peanuts 20 grams
- Red fermented bean curd 1 tablespoon
- Red yeast rice powder 2 grams
- Sweet noodle sauce 1 tablespoon
- Water starch 3 tablespoons
- White sugar 2 tablespoons
- White vinegar 2 tablespoons (blanched)
- Yangjiang Tempeh 10 grams
- Zhejiang red vinegar 3 tablespoons (blanched)

Steps

Purchase the chicken feet, defrost them, subtract the toes, and divide them into two halves

Add an appropriate amount of rice wine to soak the chicken feet in clean water to remove the fishy smell and blood. The soaked chicken feet will have no fishy smell. Soak them for about two hours. If you are in a hurry, you can soak them for half an hour.

Blanch 3 tablespoons of Zhejiang red vinegar and 2 tablespoons of white vinegar. 1 tablespoon maltose

Boil water in a soup pot, add vinegar and maltose and stir well,

Open the water and add the chicken feet

Blanch the chicken feet until they turn white and remove them

Use a steamer to spread out the chicken feet to dry them. You can also use an electric fan or hair dryer to dry them.

Heat the chicken feet in the pan at 6-70% oil temperature. Be sure to cover the pot, because the chicken feet will explode when fried and the oil will splash out to avoid burns. Be careful,

You can also add more seasoning for these steamed chicken feet (peanuts need to be soaked in advance) if you like, 3 tablespoons of water starch, 1 tablespoon of oyster sauce, and 1 tablespoon of dark soy sauce. 1 tbsp light soy sauce, 1 tbsp bean paste, 1 tbsp sweet bean paste, 1 tbsp red fermented bean curd, 30g minced onion, ginger and garlic, 2 tbsp sugar, 10g Yangjiang tempeh. 5 grams of five-spice powder, 5 grams of pepper, 2 grams of red yeast rice powder, and 5 grams of chicken essence. (If you like it spicy, you can add some chili sauce.) I made it slightly spicy, and the bean paste is already spicy.
