Slaughter and clean the fish and loach, soak the ginger and sea pepper (two-thirds red, one-third green) and cut into pieces, and cut the garlic into sections.

If there is a lot of oil, fry the fish and loaches over 50-60 degrees of heat until there are small bubbles of oil and take them out;

Then fry it again in 80% to 90% hot oil, crisp up the surface and take it out.

Leave some oil in the pot, add the bean paste and stir-fry until fragrant, add the soaked ginger, soaked sea pepper and garlic moss and stir-fry;

Add fish and loach, add dried sea pepper noodles and Sichuan pepper powder and stir-fry;

Pour cooking wine, add coriander segments, green onions, MSG and vinegar and stir-fry;
