The hairy tripe is commonly known as cow louver, which is actually the omasum of the cow. Don't choose the ones that look particularly plump and break easily when pinched by hand. After buying it home, rinse it three times with water. Then cut into large pieces, because the tripe will shrink when cooked, so don't cut it too small.

Put the day lily into boiling water and cook it for about 20 seconds. It will become less crispy after cooking for a long time. Then drain it and let it cool and put it in the bottom of the bowl. The tripe can only be cooked for a maximum of 20 seconds. If cooked for a long time, it will become impossible to chew. Drain and put into the prepared ice water. This will make the tripe crispier. When completely cold, drain and place on top of the day lilies.
