Spicy hotpot
Overview
I was cleaning out the refrigerator today and there were so many uneaten dishes. Just in time to make a spicy hot pot. What I make is slightly spicy and slightly numb. If you can tolerate spicy food, you can add or subtract the amount of chili pepper and peppercorns according to your own taste.

Tear the enoki mushrooms with your hands, slice the king oyster mushrooms, slice the tofu, cut the carrots into large pieces, tear the oyster mushrooms with your hands, and shred thousands of pieces...

I used leftover beef slices from hot pot and cut the tripe into pieces.

Add water to a clean pot and bring to a boil

Blanch the beef slices and remove the blood.

In another pot of boiling water, blanch the enoki mushrooms, king oyster mushrooms, tofu, Qianzhang... for about 20 seconds, take them out and set aside.

Put oil in the wok

When the oil is hot, add the onions, ginger, peppers, and Sichuan peppercorns prepared in advance and saute until fragrant

After sautéing, add water or stock, and when the pot boils, add the hot pot meatballs.

Then there are beef slices and ham.

After the pot boils, add salt, MSG, pepper, spicy noodles, and chili noodles. Fold evenly.

Put in enoki mushrooms, king oyster mushrooms, tofu, qianzhang...

Then add soy sauce to adjust the color, and use oil to season.

After adding the seasoning, stir evenly. Finally add tripe and lettuce. Turn off the heat and turn it over twice.
