Japanese Shrimp and Potato Pancakes
Overview
The whole family is a potato lover. This time, I added shrimps to the mashed potatoes, wrapped them in bread crumbs and fried them in an air fryer. I also sprinkled some bonito flakes on the outside. It was crispy on the outside and soft on the inside, and full of flavor. It was really delicious. Just cooking this kind of delicacy will definitely make my two claws miserable, haha

Peel and slice potatoes, steam them in a steamer, take them out and let them warm, put in plastic wrap, and use a rolling pin to mash them into a paste

Cut the shrimp into fine cubes and marinate with cooking wine, salt and a little light soy sauce for 10 minutes

Put the shrimps into the mashed potatoes, add some salt, pepper and a little oil

Prepare flour, egg liquid and bread crumbs

Dig a ball of mashed potatoes, roll it in flour, egg liquid, and bread crumbs and press it into a round cake or the shape you like

Put it into the air fryer (or oven) and fry at 180 degrees for 10 minutes

After 10 minutes, flip over and fry for about 5 minutes, until both sides are golden brown
