Cut the tenderloin into strips and set aside

Add the cut meat to cooking wine, ginger slices, a little salt, pepper, a little soy sauce, and a little water and marinate for about fifteen minutes.

Add three tablespoons of sugar, three tablespoons of vinegar, three tablespoons of tomato paste, five tablespoons of water, and a little salt into a bowl and mix well to make a sweet and sour sauce. Set aside.

Take another bowl and add eight-quarter cups of flour, eight-cups of starch, and one tablespoon of baking powder. Slowly add water to make a thick batter. Wait for about fifteen minutes to allow the baking powder to slowly take effect.

Remove the ginger slices from the marinated meat and pour into the paste, mix well and set aside.

Pour cooking oil into the pot and heat it up, then reduce the heat to low, put the battered meat strips into the oil one by one and fry until the batter is hard and take them out. Bring the oil to high heat again and put the meat strips back in and fry again until they are crispy and take them out for later use.

Pour the prepared sweet and sour sauce into the pot, boil the sugar until it bubbles and thickens, add a little water starch to thicken the sauce.
