Overview
My husband wanted to eat eels, so he bought three large ones. I thought it was a bit much, so I made two dishes. One of them is Liangxi Crispy Eel. This dish is made in Jiangsu. The eel shreds are fried twice and become jet black and shiny. The taste is sweet and sour and crunchy, and it will not become soft even if it is stored for several days.

Remove the internal organs from the eel and wash them. Prepare chopped green onion and minced ginger.
