First cut the sausage into sections of about 30 cm, then slowly turn the inside of the sausage over and remove the fat. Pour an appropriate amount of vinegar and wash it for about 5 minutes. Rinse it clean. Then wash it with baking soda powder. Rinse it with hot water. Be sure to wash it several times.

Turn the fat intestines back over and rinse with running water.

Put the washed intestines into a pressure cooker, add water, cooking wine, ginger slices, and about 10 peppercorns and press for 10 minutes.

Prepare the seasonings for the stewed soup: Sichuan peppercorns, star anise, fennel, cinnamon, bay leaves, galangal, grass fruit, nutmeg, cardamom, and angelica. (One or two large seasonings are enough.) Wrap the seasonings in gauze.

Pour the old stewed soup into a casserole, add about 200 grams of water, put in the seasoning bag, add an appropriate amount of soy sauce and bring to a boil (taste the taste, add salt to taste) and then put the cooked fat intestines in and soak for about 30 minutes.

Wash and slice green peppers.

Cut the stewed sausage into appropriate pieces with a rolling blade.

Pour oil into the pot, add green pepper and stir-fry until cooked.

Pour in the sausage and stir-fry.

Add appropriate amount of braised soup and soy sauce, stir well and remove from the pot.
