Have all materials ready;

Add dark soy sauce, light soy sauce, sugar, salt, paste pepper powder, Sichuan pepper powder, cooking wine, chopped green onion and chopped ginger to the minced beef and mix well. Add the amount you like one at a time. Finally add an egg and mix well. Marinate for one to two hours and set aside;

Mix flour and salt, then add warm water and stir with chopsticks until it becomes fluffy;

Knead it into a slightly softer dough with your hands, cover it with plastic wrap and let it rest for about half an hour;

Turn on the heat and pour a little corn oil into the pot. Pour in half of the beef filling and stir-fry evenly. Turn off the heat and let cool;

Add the fried beef filling to the other half of the raw beef filling;

Mix the raw beef filling and the fried beef filling, mix well and set aside;

Sprinkle a little flour on the cutting board, take out the relaxed dough and knead it evenly;

Divide the dough into 4 parts and roll into balls, cover with plastic wrap and let rest for about 15 minutes;

Take a portion of the dough, roll it into a square slice with a rolling pin, and evenly spread the beef filling on three-quarters of it (I divided the filling into three small portions and placed them where needed to spread them evenly), leaving a blank space in the lower right corner;

Use a knife to cut close to the filling, and turn the blank dough sheet directly up to make the first fold (you can also use a cutter to turn it over!)

Then flip to the upper left corner for the second fold;

Flip to the lower left corner again for the third fold;

Gently press the edges with your hands, and then gently flatten the surface;

Place into a preheated pan lightly greased with oil;

Fry over medium-low heat until both sides are golden brown (flip in the middle according to the color), and it is ready to serve;
