Wash the three-yellow chicken and put it into a pot of boiling water and cook for fifteen minutes. Turn off the heat and leave it in the pot to soak for a few minutes. Then take it out and wash it with cold water. Set aside

Prepare the marinade ingredients: cinnamon, star anise, pepper, fennel, bay leaves, grass fruit, garlic sprouts, green onions, ginger slices, garlic, and dried chili peppers (wash them)

Pour appropriate amount of oil into the pot and stir-fry the marinade until fragrant

After stir-frying the marinade, add appropriate amount of light soy sauce, dark soy sauce, oyster sauce and water

After the brine boils, add the three-yellow chicken

After the three-yellow chicken is colored, (if the color is not enough, add dark soy sauce for coloring)

After the three-yellow chicken is finished coloring, take out the three-yellow chicken, cut it into pieces and put it on a plate

After loading (to be used)

The last step is to make a small dish of dipping sauce. Put an appropriate amount of oil, minced ginger, minced garlic, and a little salt into the pot and stir-fry for a while, then put it in a small dish
