  1. Wash the three-yellow chicken and put it into a pot of boiling water and cook for fifteen minutes. Turn off the heat and leave it in the pot to soak for a few minutes. Then take it out and wash it with cold water. Set aside

  2. Prepare the marinade ingredients: cinnamon, star anise, pepper, fennel, bay leaves, grass fruit, garlic sprouts, green onions, ginger slices, garlic, and dried chili peppers (wash them)
