Cut the tofu into pieces about 1 cm thick.

Beat the eggs evenly and mix in the coating powder.

Brush a baking sheet with vegetable oil.

Dip the tofu cubes in the egg liquid first.

Then roll it all over your body in flour and shake it with your hands.

Put it in the baking pan, don't bake it in a hurry, wait for the flour layer to become moist, which means the flour is penetrated by the egg liquid and becomes one.

Then brush a layer of vegetable oil on the surface and use the air fryer function, high setting, for 6 to 8 minutes.

Use your hands to chop the chilies, ginger, and garlic or mince them with a tool.

"Fry" the tofu until golden brown.

Turn over and fry again at the same temperature and time until golden brown.

Chop the leeks, put them into a bowl, add the minced green onions, ginger and garlic, then add 1 tablespoon light soy sauce, 1 tablespoon Zhejiang balsamic vinegar, 1/2 tablespoon lemon juice, 1+1/2 tablespoons sugar, 1/3 teaspoon pepper, 1 tablespoon chili oil, 1/2 tablespoon fish sauce, 2 tablespoons cold boiled water, mix well and enjoy.
