Chaoshan Fried Bean Curd Corn
Overview
Fried bean curds are a special snack in our hometown (Huilai). In the dialect of my hometown, it is called Fudougan. In Chaozhou dialect, it means deep-fried. For example, fried dough sticks are usually referred to as fried dough sticks. Craving this snack? You don’t have to go to the snack street to eat in your hometown. You can buy it at any roadside stall, and you can eat it all year round. The dried bean curd has a golden color after being fried. Bite open the crispy outer shell, and there are vegetables or tender fillings of vegetables or meat inside. The combination of crisp and tender, and then dipped in the dense chili sauce, has a unique flavor that makes people drool after remembering it.

Add minced mushrooms, minced red pepper and minced scallions to the minced meat, mix well, add seasonings and an appropriate amount of starch and mix in one direction until it becomes gelatinous.

Remove the heads and tails of the bean sprouts, cut into small sections about 1.5 cm long, add to the minced meat and mix gently, then sprinkle with chopped green onion to form the bean sprout meat filling.

As shown in the picture, Chaoshan soybeans are cut into two triangles diagonally. Use a special spoon to scoop out the meat.

Wrap the dug dried tofu into the bean sprout meat filling and set aside.

Scoop out the dried bean curd and press it into a puree. Add sweet potato starch and appropriate amount of water to make a bean paste batter.

As shown in the picture, the dried tofu is wrapped and the dried bean paste is used to seal the dried tofu corner.

Heat oil in a pan, add dried bean sprouts and fry over medium heat until cooked.

Remove and drain the oil. (Dried bean curd is best eaten hot with chili sauce!)
