Korean soybean paste soup
Overview
The main seasoning of this soup is Korean doenjang. Throw meat, vegetables, tofu, seafood, etc. into a stone pot, use doenjang as the main seasoning, and slowly cook it to bring out the aroma of doenjang. It is simple and easy to operate, delicious and goes well with rice.

After washing the rice, add an appropriate amount of water and scrub with both hands until the water turns milky white. Pour out the water and set aside;

Cut the tofu into 1cm square pieces, soak in light salt water for 15 minutes, drain and set aside;

Cut the pork tenderloin into wide strips, add soaked mushrooms cut into thick strips and all the marinated meat ingredients, mix well and marinate for 15 minutes;

Dice watermelon;

Wash fresh mushrooms, drain and set aside;

Cut green onions and green and red peppers diagonally into small sections;

Lift the pot, add a little cooking oil, add the marinated shredded pork and shredded mushrooms and stir-fry until the shredded meat turns white and becomes fragrant

Add rice water;

Add bean paste and chili sauce at the same time;

Add potatoes at the same time;

Cook while stirring constantly until the sauce is completely dissolved

Boil over high heat until the potatoes are medium cooked, about 4 or 5 minutes;

Add tofu and watermelon at the same time;

After it boils again, add chili powder, turn to medium-low heat and slowly simmer out the flavor of miso, and cook until the tofu begins to float;

Add enoki mushrooms and other fresh mushrooms;

After boiling again, add green onions and peppers;

Stir evenly and bring to a boil. Taste the taste. If it feels too bland, add some salt.
